Hi! My name is Erin. I wholeheartedly love cooking and have always known I wanted to be a nurse. After graduating from nursing school, life unexpectedly landed me in the middle of Jackson, MS as an ER nurse. I absolutely loved it. My career became my passion as I transitioned into a helicopter flight nurse. I was living my upmost dream and found an avenue where caring for the sickest patients collided with my love for cooking.
While working a 24 hour shift at the air base I have tasted some of the most amazing meals with my fellow crew members. My eagerness to learn powered me on as I went on to become a Nurse Practitioner back in the ER. I have found that amazing food can be comfort to the hurting and refreshing to those providing the care. I am not only a Practitioner of medicine but of food!
I am so thankful that God led me to the nursing field, which ultimately led me to a nursing school buddy and after college roommate, and then to my amazing husband. We have been so blessed with our two girls and now I am thankful to spend most of my days with them. I am still working part time; however, I am so thankful that most of my “emergencies” now involve little ones and food!
