Baked Apple Crisp

If I need a walk down memory lane, all the way back to Kosciusko, MS, I just make this delicious side! I have always loved this dish. The soft, sweet, and tender apples topped with a warm, chewy, cinnamon, oatmeal crust. This really is the perfect brunch, breakfast, breakfast for dinner “brinner”, or dessert dish. It has also become my official late-night pregnancy craving!

I confess when I was growing up, I was not the biggest fan of breakfast for dinner. I was of the mindset that breakfast food should be served only in the morning. My change of thinking has completely transformed as I am now a wife and mother. I had the genius idea of cooking enough to supply a good helping of leftovers after supper time which would lead to a no stress morning with lots of breakfast options! I also use to be a morning person before I had two babies with another on the way!

I do not mind at all when I see apples on sale at the grocery store or have a few that are about to go bad. I generally have the rest of the pantry ingredients already on hand. And hey, what’s better than warm fruit topped with butter and brown sugar? What makes this dish even more desirable? That the “baked” part can be accomplished with a quick microwave. There is no need to heat up the house on those hot Mississippi days!

This delicious side should not be dedicated as only a breakfast option. It is also wonderful served with a warm ham steak or next to a melting scoop of vanilla ice cream! Next time you need a sweet fix (with a side of fruit) I hope you give this one a try!

Baked Apple Crisp

Ingredients

  • 5-6 apples peeled, cored, and diced
  • 2/3 cup quick- cooking rolled oats
  • 1/3 cup all purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter

Instructions

  • Place the diced apples in the bottom of a greased 8 x 8 baking dish.
  • Combine remaining ingredients, except butter, in a mixing bowl.
  • Now cut the butter into the oatmeal mixture until crumbly.
  • Sprinkle the oatmeal mixture over the apples.
  • Microwave for 12-16 minutes, until apples are tender.

Notes

You can also substitute fresh apples for 2 cans of apple pie filling. Beware, this makes the dish a lot sweeter!

If you are anything like me, I am still trying to recover from the holiday season, which was seven weeks ago! I have completely exhausted my freezer stash and currently operating in the “peanut butter and jelly sandwich” survival mode! To lessen the I just fed my children cereal for breakfast three days in a row guilt I turn to these babies. These stud muffins are only composed of three ingredients and freeze beautifully. I usually triple the recipe in an attempt to stock my freezer. All it takes is a quick 30 second reheat in the microwave and my family as a more sustainable morning meal. I am ready to tackle any day after this powerhouse breakfast!

Cheddar Sausage Muffins

The easiest three ingredient recipe for busy mornings

Ingredients

  • 1 pound sausage cooked
  • 10.5 oz can cheddar cheese condensed soup
  • 2 cups Baking Mix

Instructions

  • Mix all the ingredients together and place in muffin tins lined with cupcake liners.
  • Bake at 350 degrees for 30 minutes.

Notes

You can then add even more favor by topping these sausage muffins with syrup or jelly. Freeze the leftover muffins then reheat your desired amount in the microwave in 15-30 second intervals until warm. 

It does not get any easier than this! I smile every time I start my day with these muffins. They bring back fond memories as I was first introduced to them on our family summer vacations by my sister-in-law. Since then I usually have a gallon zip lock bag in the freezer available for those rushed mornings.

Fun Nursing Fact: Although these muffins might fall in the quick category don’t count on that for any Emergency Room visit. No phone app or call ahead can predict the unstable trauma patient that was just brought in through the ambulance bay, as you are also signing in, requiring all available personnel. But hey, if you have a bag of cheddar sausage muffins in the freezer you can have a meal ready whenever you are discharged!  

Apple Monkey Bread Muffins

Monkey Bread always reminds me of Vacation Bible School as a high school worker since the snack room always seemed to be stocked with its gooey goodness. I have continued to make it through the years and have enjoyed its buttery and syrupy richness. I used to always save this recipe for when guests are coming over as traditionally I’ve made it in a Bundt pan. Carving through this decadent breakfast for just two people at home seemed excessive. I was exceptionally excited to whip of a batch of individual monkey bread muffins. The individual portions took away all the guilt!

Food H & P: (makes 18 muffins)
2 large cans of refrigerated biscuits
1 stick (1/2 cup of butter)
½ cup of brown sugar
1/3 cup of granulated sugar
2 teaspoons of ground cinnamon
2 apples- cored, peeled, and chopped into small pieces

Food Rx:
Spray the muffin tins with cooking spray. Melt butter and mix in brown sugar in a small bowl. Place a large spoonful of butter and brown sugar mixture into the bottom of the muffin tins. Cut each biscuit into 4 pieces. Mix the granulated sugar and cinnamon in a gallon zip lock bag (or large bowl) and add the biscuits. Shake (or stir) the biscuits and chopped apples together with the sugar mixture. Fill the muffin tins with the biscuit and apples then top with any remaining butter and brown sugar mixture. Bake at 350 degrees for 15-20 mins or until the biscuits are golden and cooked through. Let the muffins sit in the muffin tray for 2-3 mins before removing.

Nursing Tip:
Speaking of monkeys and any other animals it is NOT necessary to bring live or decreased animals with you to any ER or clinic. If you have a snake bite I will say it is helpful to know the type of snake in order to assess the need for antivenom medication; however, a cell phone picture will do just fine!
